Gum arabic (other names are soluble gum, acacia gum) is a food additive of natural origin, which has the designation E414 in the composition of the products. Gum arabic is obtained from the juice of certain varieties of acacias that have hardened in air, growing in Australia, Africa and India.
Gum arabic in food production plays the role of a stabilizer, film former and structure regulator.
In the manufacture of chewing gum, it retains various flavors in the gum base, making the aftertaste longer. It is well suited to prevent the crystallization of sugar and as a binder in the production of sweets, marshmallows.
Gum arabic allows the use of drageeing technology in the production of confectionery. The most common food products are nuts and raisins in the form of dragees coated with sugar, chocolate, caramel, etc.
Gum arabic is used in the preparation of icing for applying to the surface of bakery products as a decoration and in order to improve their taste. This is possible due to the good adhesive properties of gum arabic. The icing, applied hot, after cooling, is tightly fixed on the surface of the bread.
In the confectionery business, gum arabic is applied to cake icing before baking by spraying or brushing, and after evaporation from the surface under the influence of temperature, the icing becomes more attractive and glossy in appearance. This food additive is also included in the formulation of various alcoholic and non-alcoholic drinks and beer.
